1 cup Long-grain Basmati rice
2 tbsp Sarthak Satvik desi cow ghee
2 tsp Cumin seeds
1 Green Chilli, chopped
2-3 Green Cardamom
1 inch Cinnamon
3-4 Black Peppercorns
2-3 drops of Lemon juice
1 Bay Leaf
1 tsp Salt or to taste
1 tbsp Coriander leaves, finely chopped
Wash the rice thoroughly and soak in 2-3 cups of water for about 30 minutes. Drain the water.
Heat ghee in a pan. Once heated, add cumin seeds so that they crackle well, then add green chilli and fry for a few seconds.
Add cardamom, cloves, peppercorns and cinnamon.
Add the soaked rice, lemon juice, bay leaf, salt and 2 cups of water (double the quantity of rice).
Cover the pan and cook the rice on low heat till it has softened and the water is absorbed.
Then switch off the heat and let the rice rest for 5 minutes. Garnish with freshly chopped coriander.
