Ingredients:

1 cup Long-grain Basmati rice

2 tbsp Sarthak Satvik desi cow ghee

2 tsp Cumin seeds

1 Green Chilli, chopped

3-4 Cloves

2-3 Green Cardamom

1 inch Cinnamon

3-4 Black Peppercorns

2-3 drops of Lemon juice

1 Bay Leaf

1 tsp Salt or to taste

1 tbsp Coriander leaves, finely chopped

Preparation method:

  • Wash the rice thoroughly and soak in 2-3 cups of water for about 30 minutes. Drain the water.

  • Heat ghee in a pan. Once heated, add cumin seeds so that they crackle well, then add green chilli and fry for a few seconds.

  • Add cardamom, cloves, peppercorns and cinnamon.

  • Add the soaked rice, lemon juice, bay leaf, salt and 2 cups of water (double the quantity of rice).

  • Cover the pan and cook the rice on low heat till it has softened and the water is absorbed.

  • Then switch off the heat and let the rice rest for 5 minutes. Garnish with freshly chopped coriander.
